Cottage cheese pancakes with collagen

Soft, golden cottage cheese pancakes with collagen – inspired by traditional Ukrainian syrnyky and perfect for breakfast, brunch, or as a light snack.

These cottage cheese pancakes are soft and juicy on the inside, with a lightly golden surface after frying. They are best served warm with crème fraîche and fresh berries, preferably with a drizzle of honey or berry sauce on top.

In this version, we add unflavored collagen powder directly to the batter. It's an easy way to incorporate collagen into your food if you want a little variety from coffee, smoothies, or water.

You will need

  • 300 g cottage cheese
  • 10 g collagen powder
  • 1 egg
  • 1–2 tbsp oat flour or rice flour
  • 1 tsp vanilla extract or a little vanilla powder
  • sweetener to taste
  • a little butter or oil for frying

To serve

  • crème fraîche
  • fresh blueberries, raspberries, or strawberries
  • a little honey
  • berry sauce or berry purée, optional

Instructions

Place cottage cheese in a bowl. If you want a smoother and creamier consistency, you can mash it well with a fork or quickly blend it with an immersion blender.

Add egg, collagen powder, vanilla, and desired sweetener. Mix well until the batter is smooth.

Add one tablespoon of flour first. Let the mixture sit for a couple of minutes so the flour can absorb some of the moisture. If the batter is still too loose to shape, add a little more flour.

Shape small, round cottage cheese pancakes with your hands. You can put a little flour on your hands if the batter is sticky.

Heat a frying pan over medium heat and add a little butter or oil. Fry the pancakes for a few minutes on each side until they are golden brown and heated through.

Serve the cottage cheese pancakes warm with crème fraîche and fresh berries. Top with a drizzle of honey or berry sauce.

Can cottage cheese pancakes be baked in the oven?

Yes. Place the pancakes on a baking sheet lined with parchment paper and bake them at 180 °C (350 °F) for approximately 15–20 minutes.

Turn them halfway through baking if you want a more even golden surface on both sides.
