Berry Bites with Collagen Powder – Easy Recipe
Small chocolate bites with raspberries, coconut and collagen – fresh, sweet and easy to make without baking.
These Berry Bites combine tart raspberries with coconut and dark chocolate. The collagen powder is mixed directly into the filling, making this an easy way to use collagen in food when you want something other than coffee, smoothies, or water.
Use a neutral collagen powder so that the taste of raspberries and dark chocolate takes center stage.
You will need:
- 100 g raspberries, fresh or frozen
- 40–50 g desiccated coconut
- 10 g collagen powder
- 1 tsp honey
- 70–80 g dark chocolate, preferably at least 70% cocoa
Optional toppings:
- a little coconut
- freeze-dried raspberries
- finely chopped pistachios
- a small pinch of sea salt
Instructions
If using frozen raspberries, let them thaw first. Drain off any excess liquid so the mixture doesn't become too loose.
Mash the raspberries with a fork until you get a coarse purée.
Add desiccated coconut, collagen powder, and honey. Mix well until everything is evenly distributed.
Let the mixture sit for a few minutes. The coconut will absorb some of the liquid from the raspberries, making the mixture easier to shape.
Form small balls or slightly flattened bites with your hands and place them on a tray or plate lined with parchment paper.
Place them in the freezer for 20–30 minutes. They should become firm enough to be easily dipped in chocolate.
Melt the dark chocolate carefully over a double boiler or in short intervals in the microwave.
Dip each Berry Bite in the chocolate. You can cover them completely or only partially.
Optionally, sprinkle a little coconut, freeze-dried raspberries, or chopped pistachios over them before the chocolate hardens.
Return them to the refrigerator until the chocolate is completely set.
How to store Berry Bites?
Store them in an airtight container in the refrigerator. They taste best cold, when the chocolate is firm and the raspberry filling is still soft.
You can also store them in the freezer. If completely frozen, let them sit at room temperature for a few minutes before serving.
Can collagen powder be used in desserts?
Yes. A collagen powder with a neutral taste can easily be mixed into many cold recipes without significantly altering the flavor.
It is suitable for:
- homemade chocolate bites
- smoothie bowls
- yogurt
- chia pudding
- energy balls
- porridge
- baked goods
Berry Bites are therefore an easy recipe with collagen powder when you want to vary your daily collagen routine.
Tips for best results
If the raspberries are very juicy, you can add a little extra desiccated coconut until the mixture holds its shape.
Don't make the bites too large. Smaller bites are easier to cover with chocolate and achieve a better balance between the tart filling and the dark chocolate coating.
If you want a more intense raspberry flavor, you can crush some freeze-dried raspberries and mix them into the filling.
